Description

This creamy Neiman Marcus Chicken Casserole combines shredded chicken, cheddar, bacon, green onions, almonds, and a crunchy Ritz cracker topping. It’s a warm, crowd-pleasing comfort food that’s easy to make in the Instant Pot or slow cooker.


Ingredients

1/2 cup chicken broth

20 oz boneless, skinless chicken breasts or thighs (frozen is fine)

1 tsp poultry seasoning

1 tsp onion powder

1 tsp garlic powder

1 tsp black pepper

1/4 tsp kosher salt

2 Tbsp cornstarch

1/2 cup milk

1/2 cup sour cream

1 cup shredded sharp cheddar cheese

1/3 cup cooked bacon crumbles

2 green onions, thinly sliced

1/4 cup sliced almonds

1 1/2 tsp hot sauce

12 Ritz crackers, crushed

2 Tbsp melted butter


Instructions

1. Add chicken broth and chicken to Instant Pot. Season with poultry seasoning, garlic powder, onion powder, pepper, and salt.

2. Seal lid and set to LOW pressure: 15 min if frozen, 12 min if fresh. Let naturally release 10 min, then vent.

3. Remove chicken and shred.

4. Mix cornstarch with 3 Tbsp cold water. Turn on sauté, stir into broth to thicken. Turn off heat.

5. In a bowl, temper milk and sour cream with a bit of hot liquid. Stir into pot.

6. Add shredded chicken, cheese, bacon, onions, almonds, and hot sauce. Stir to combine.

7. Mix crushed crackers with melted butter and sprinkle on top.

8. Optional: Crisp topping with air fryer lid at 350°F for 2–3 min.

9. Serve over rice, mashed potatoes, or bread.

10. To store, refrigerate up to 4 days or freeze up to 3 months. Reheat gently with added milk if needed.

Notes

You can make this in a slow cooker too—just cook the chicken on low for 4 hours before following the rest of the steps.

Leftovers are great stuffed into baked potatoes or served on toast.

To make it spicier, increase the hot sauce or add a pinch of cayenne.
