Ingredients

  • 1 lb eggplant, cut in 1/2” pieces
  • 4 tbsp avocado oil or preferred high-heat cooking oil
  • 1 tsp kosher salt
  • Optional: 1/4 tsp black pepper
  • Optional: 1/4 tsp red chili flakes
  • Optional: 2 sprigs fresh thyme

Instructions

  • In a large bowl, toss eggplant cubes with oil, salt, and optional black pepper and chili flakes.
  • Preheat air fryer to 400ºF (200ºC).
  • Air fry eggplant for 8 minutes.
  • Shake or toss the basket, then air fry for another 7–10 minutes, until golden and crispy outside and soft inside.
  • Serve hot.

Notes

Use cold eggplant straight from the fridge for extra crispiness.
