- 1 lb eggplant, cut in 1/2” pieces
- 4 tbsp avocado oil or preferred high-heat cooking oil
- 1 tsp kosher salt
- Optional: 1/4 tsp black pepper
- Optional: 1/4 tsp red chili flakes
- Optional: 2 sprigs fresh thyme
Instructions
- In a large bowl, toss eggplant cubes with oil, salt, and optional black pepper and chili flakes.
- Preheat air fryer to 400ºF (200ºC).
- Air fry eggplant for 8 minutes.
- Shake or toss the basket, then air fry for another 7–10 minutes, until golden and crispy outside and soft inside.
- Serve hot.
Notes
Use cold eggplant straight from the fridge for extra crispiness.
Avocado oil or any high-smoke-point oil works best.
No need to pre-salt eggplant—air fryer heat removes moisture quickly.
