- 2 cups sweet corn (frozen, canned, or grilled)
- 1 green bell pepper, diced
- 1 large avocado, diced
- 1 jalapeño pepper, seeded and diced
- 1/2 cup diced red onion
- 1/2 cup chopped fresh cilantro
- 1/3 cup extra-virgin olive oil
- 3 tablespoons fresh lime juice
- 1 teaspoon honey
- 2 garlic cloves, minced
- 1 teaspoon kosher salt
- 1/2 teaspoon ground cumin
- 1/4 teaspoon ground black pepper
Instructions
- Combine the black beans, black-eyed peas, tomatoes, bell pepper, avocado, jalapeño, red onion, and cilantro in a large bowl.
- Whisk the olive oil, lime juice, honey, garlic, salt, cumin, and black pepper in a small bowl to make the dressing.
- Pour the dressing over the bean mixture and stir until evenly coated.
- Serve immediately, or chill for 30 minutes to let the flavors meld.
