  • 1 green bell pepper, diced
  • 1 large avocado, diced
  • 1 jalapeño pepper, seeded and diced
  • 1/2 cup diced red onion
  • 1/2 cup chopped fresh cilantro
  • 1/3 cup extra-virgin olive oil
  • 3 tablespoons fresh lime juice
  • 1 teaspoon honey
  • 2 garlic cloves, minced
  • 1 teaspoon kosher salt
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon ground black pepper

Instructions

  • Combine the black beans, black-eyed peas, tomatoes, bell pepper, avocado, jalapeño, red onion, and cilantro in a large bowl.
  • Whisk the olive oil, lime juice, honey, garlic, salt, cumin, and black pepper in a small bowl to make the dressing.
